- 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
- 1 teaspoon vanilla extract
- 1/2 cup sour cream (room temperature)
- 3 large eggs (room temperature)

Instructions
- Preheat the oven to 350°F (180°C). Prepare a 9-inch springform pan by wrapping it in tin foil and greasing it lightly.
- For the crust, combine graham crumbs, brown sugar, cinnamon, and melted butter. Press into the bottom of the prepared pan.
- For the apple filling, peel and slice apples, mix with brown sugar and cinnamon; set aside.
- In a mixing bowl, beat cream cheese until smooth. Add sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs; mix until well combined.
- Layer the apple filling over the crust and pour cheesecake batter on top.
- Bake in a water bath for about 60 minutes or until set. Let cool gradually in the oven with the door ajar.
- Chill in the refrigerator for at least 4 hours before serving.
